Perfect crunchy Plantain chips in Airfryer

Plantain chips and Kerala are much associated. Anyone who visits there would buy definitely buy these chips. There they fry the plantain slices in coconut oil and the elevates the chips to a whole new level.
I usually fry the chips in peanut oil or corn oil before buying the airfryer. Click to see my fried traditional plantain chips
I tried baking the chips in cookie sheets, but it takes much time and also the quality differs. But if you want to bake it more perfectly , use a copper wire basket

I used to have another airfryer (Bella brand) and it was good too. But we could do in small batches only. Recently we bought this Ninja foodie 6 in 1 indoor grill during Thanksgiving from Kohls. After that airfrying has become more easier because of that large surface area.  We donated our previous airfyer and started using the Ninja grill regularly. 

Instead of the regular mandalin  (see below my mom's grandmas's chips kattai, which I am keeping as treasure. It's made of palakattai - jackfruit tree wood, I heard), I have used cuisinart food processor slicer attachment.  This food processor comes really handy and saves much time and it's one of my most favorites. 

I won't say that the airfried chips tastes exactly the same as fried kerala chips, but still this tastes super crunchy and delicious. Nowadays we love and prefer airfrying better than deep fried ones :)

Ingredients:
Unripe plantain (long variety) - 1 or as per need
coconut oil or olive oil (any oil) - 1 tbsp
turmeric powder - 1 /2 tsp (optional)
salt - 1 tsp
(Red chilly powder - little for garninshing)


Method:
Peel the skin of plantain gently , leaving behind some thick skin on.  If using an adjustable type slicer, then set the screw to make medium thin to thick chips for plantain. Slice the plantains and keep handy.
In the mean time , preheat the airfryer . Set the temperature to 330 C and 10 minutes. 
Add salt, turmeric powder, oil to the sliced plantain and mix gently.
After the preheating is done , it will show 'ADD FOOD'. Then open the top and arrange the chips in single layer. After covering the entire tray, arrange another layer in zig zag fashion over the first layer. Never dump all chopped slices in a hurry. This may take some time, but still worth it.
Close the hood and wait till 3 minutes is left. Open and check. Toss using a tongs and increase to 345 C , to get a pretty color. 
Take out and gather the chips in a bowl (don't close it with lid).
Likewise repeat and airfry all the chips.
Put the chips in a container and sprinkle little salt and chilly powder. Shake and mix well.
Keep open to cool completely before putting the lid.
Store at room temperature.
Plantain chips is ready.


Serving suggestion:
Serve as snack or side dish with any rice.

Note:
The success of homemade chips (plantain or potato), lies in the following:
1. the thickness of the chips - For deep frying - medium thin to thick chips
                                            For Air frying - slice them thin (not wafer thin)
2. The quality of vegetable used. (fresh is the best). Yethan kaai (Plantain) is the best. Matured and little ripe is also good. We can see them at Aldi and many American grocery stores in USA.
3. Arrange the chips one by one in single layer and then arrange another layer over it. Do not crowd or dump on fryer basket (they will definitely stick with each other).

Air fryer : Onion Pakoda

 Air fried spicy snacks is my newest passion in cooking. After I started airfrying (since 4 years or more), I started loving air-fried items better than deep fried ones. When it comes to airfrying , one has to develop a mindset to appreciate this taste too, as our tastebuds are used to deep fried items only. So the first step is to prepare some easy recipes like French fries in air fryer , sweet potato fries and we will slowly get used to this. There are a lot of airfryer recipes in the internet. I formulate my own, to suit our taste.  My hubby loves this very much, and many a days he will demand this quick snack along with tea:) . Try this and fall in love with oil-less  spicy snacks.




Ingredients:
Red onion - 2 (big) (250 gms)
besan flour - 1/2 cup
rice flour - 2 tbsp
salt - 1 tsp (to taste)
olive oil (or any cooking oil) - 1 tbsp
red chili powder - 1/2 tsp
asafetida (hing) - 1/4 tsp
garam masala (optional) - 1/2 tsp

Method:
Preheat the airfryer to 375 F.
Peel and slice the onion into long pieces. Put it in a mixing bowl.
Add all the other items and mix well. Sprinkle very little water (handful) and mix well.
The mix should not be watery.
Spread this pakora mix in the airfryer basket (not necessarily a single layer).
I do this quantity in 2 batches.
Start heating and bake for 20 minutes. Every 5 minutes take the basket out and shake well and repeat cooking again. Depending upon the airfryer , onion size and water content in the recipe, the pakora will get ready within 15-20 mins. Don’t let it char.
Take out and enjoy.

For bigger batch:
When it comes to party, I wouldn’t suggest airfried items, as this gets longer time to cook and also, deep frying is always associated with party foods.
But if you are planning for 'meal prep' kind of idea, then make this onion pakora in advance (say a day before) , put them in zip lock covers and keep refrigerated.
Before serving do the airfrying for 5 mins at 350 F or spread on a baking sheet and bake for 10 minutes (until crispy) at 350F in regular oven.
Serve hot.

Serving suggestions:
Serve as evening snack with tomato ketchup and hot tea.

Air fried Arbi (Seppan kilangu)

Seppan kilangu / arbi is a delicious root vegetable. It is a popular alternative for potato roast curry of India. 
Usually I prepare the arbi fry by deep frying in oil or by tawa roast method.
After I found that airfryer recipe for arbi, I am making it healthier with less oil in an airfryer.
This is a dish I prepare once or twice a month as a side dish for dal rice or bisibelebath. 

Note:  If you are trying this recipe for a party or for large batch, do this in advance and keep in fridge.  Just make sure to do airfrying  again for a few minutes it before serving.

Air fried Arbi is ready !


Ingredients:
Arbi (seppan kilangu) - 10 roots (1/2 kg)
rice flour - 1 tsp
besan flour - 1 tbsp
salt - to taste 
turmeric powder - 1/4 tsp
black pepper powder - 1.5 tbsp
cumin powder - 1/2 tsp
Oil (olive oil) - 2 tsp

Preparation:
First rinse the arbi thoroughly to remove all dirt.
Keep it in a vessel and pour water to cover it fully. Boil it in water for 10 mins. Check if a fork or knife can poke it easily. Switch off. (In this stage it can be cooled and stored in fridge with skin for one or two days for convenience).
For immediate cooking, pour cold water and peel them.
Keep aside.


Method:
Cut the cooked arbi  it into 1/2 inch thick circles.
Mix salt, flours,oil, turmeric, pepper powder with a drop of water. Add it to the pieces and mix well.

Preheat the Air-fryer for 5 mins at 350 F.  
Spread the masala coated arbi slices in a single layer inside the fryer basket.(I keep them tightly packed in single layer).
Air fry for 10 mins. Pull out the basket and shake well. Then keep air frying for another 10 mins. 
Do this until it turns crispy in the outside and soft in the inside for each and every slice.
My air fryer takes less than 20 mins for the entire process. 
Repeat and cook the remaining arbi slices.
Air fried arbi is ready to eat !
Dust some more pepper powder over the fried arbi and shake well and serve hot.


Another method:
Instead of pepper + cumin powder , we can mix red chilly powder and garam masal powder along with flours and deep fry them. Tandoori mix also holds good. 


Serving suggestion:
Serve as side dish with curd rice, vegetable biryani, pulav, bisibelebath or simply as a tea time snack.

Tips:
Normally taro or arbi won't cause any allergies. In Indian recipes, black pepper is added to remove allergens from all root veggies,
The South American arbi contains less mucilage and easy to handle, whereas Indian arbi has a unique nice flavor. 
We can boil the arbi and keep refrigerated without peeling for a day or two. I generally do the boiling part the previous night. It comes handy. 
As this recipe takes long time (than frying in oil), it won't come handy while having guests. So we can prepare it and keep it in fridge and we can re-fry them in air fryer  for a few minutes before serving. By this way we can make a healthy fried side dish for our party.

Crispy chickpeas in airfryer

One of my recent innovations is airfried channa. One day, I was about to make some sundal (chickpea salad) out of the soaked channa and suddenly got an idea and tried a bowl of this. Though its crispy , it wouldn't be hard like the store bought uppu kadalai.










Ingredients:
Chickpeas (channa / kondai kadalai) - 1 cup
olive oil / or any cooking oil - 1 tbsp
rice flour - 1 tbsp (optional)
pink Himalayan salt / salt - to taste (1 tsp)
turmeric powder - 1 tsp
red chili powder - 1/2 tsp
curry masala powder - 1/2 tsp

Method:
Rinse and soak the white channa for 6-8 hours or overnight.
Drain the water.
Mix all other items given (salt, turmeric powder, rice flour, chili powder, oil, curry powder) using a spoon.
Preheat the airfryer to 400 F for 5 minutes (I do this while mixing the ingredients). Set the timer to  15 minutes.
My airfryer can handle 1 cup (presoaked quantity) of channa. So do it in batches, if needed.
Start the frying process. Airfry it for 5 minutes in maximum heat. Then reduce it to 375 and toss it and repeat for another 5 minutes. Take out , toss and repeat till it gets crispy.
Always keep watching after 10 minutes as it gets brown and hard if not tossed in between.

Take out. Spread over a broad plate and let cool. Then store it in airtight container.
Airfried channa is ready to snack on!

French fries in air fryer

If there is a contest between all 'the world's most favorite foods' , then I am sure French fries will win that crown.  From kids to grandparents, I have never seen anyone saying no to it. But with the rise of calorie consciousness, everybody wants this to be inside their calorie limit.  In those moments our airfryer comes as the helping hand. It won't be too much, if I say airfryers and French fries are made for each other. Of all the recipes I made using the airfryer, Potato fries came absolutely the same like oil fried.
I couldn't believe the results I got. I have used russet potatoes, as it is more starchy and it is believed to produce the best French fries. Here is an interesting link to know more about different varieties of potatoes.

Preparing an authentic French fry is like an art. It has many steps and here is how pros do it.

I have my own version for airfried potatoes and I am sure it gives a perfect fry, which tastes more similar to oil fried ones.





Air fried French fries

Ingredients:
Russet potato - 1 (large)
Himalayan pink salt (or) sea salt - 1/8 tsp
turmeric powder - a pinch
extra virgin olive oil - 1 tsp

Method:
Preheat the airfryer for 5 minutes at 400 F.
Rinse the potato and remove the skin.
Slice it into long strips of 1/3 inch thickness.
Put in a bowl and add other ingredients.
Mix well.
Put this in the airfryer basket.
Cook at 400 F for 5 minutes, take out and toss well.
Start cooking again at 350 F for 5 more minutes.
Check every 3 minutes and mine got ready by 8 minutes.
The potato will become crispy on outside and soft inside.
It will get a golden color with a hint of mild red in some spots.  That is the perfect stage.
Take out and enjoy while it is hot.

Note:
This fries tastes much similar to restaurant made (while hot). It gets soft , if left outside for more time.  But it can be made crispier again using airfryer.

Sweet Potato Fries in Air fryer

As every new year begins, most of us enthusiastically write up some goals. One among them would be ' getting in shape ' :) . But we all love those fries too. The modern technology has fixed that for those food lovers and now we can have our fries too using this new gadget.
To start the new year,  I thought it would be more appropriate to write about this user friendly gadget, the air fryer.  I bought this Bella air fryer online during last 'thanksgiving sale' for less than $ 50. At first I saw this in my brother's house and I loved the French fries he made for me. I gave  a lot of thinking before buying this new equipment, as I am getting more choosier on which gadgets sits in the kitchen counter after buying that kitchenaid mixer :) Anyway I love all my kitchen gadgets and somehow will find space for everything :).  I was comparing the conventional oven with this air fryer. As I am sure that our conventional oven can do everything an air fryer does. But the air fryer takes lesser time, cooks more evenly and it is easier to handle this less weight fryer basket too. It would be more convenient to use air fryer during hot weathers while we all love our oven's heating effect during winters :) Above all, the most deciding factor for me was the 'thanksgiving offer' and those ads. I didn't go for the much pricier brand as it was not on a 'sale' :) and bought this Bella brand and I adore it.

I have tried many recipes using this air fryer and I am sure it will become the next favorite for all the home chefs :) Anyways we can do these sweet potato fries using a baking oven too. Click to see my earlier recipe Baked sweet potato chips / fries .  If you are trying to make this in a big batch for more people, then prepare the sweet potatoes, mariante and keep in fridge till frying. Or do the frying for half way and keep frozen, then do the air frying without defrosting whenever needed.
I made fries using 3 medium size sweet poatoes (almost 2 lb). I did the air frying in 2 batches and it turned out amazing. I have used the yellow sweet potatoes as it is more healthy. But we can use the expensive Japanese yam (Indian sweet potatoes) too. The air fried 'fries' would not be crispier like oil fried. But personally I consider these fries as more delicious as they are not greasy.
Try this and I am sure you all will love this recipe.



Sweet potato fries made in air fryer

Rinse the sweet potatoes, peel them and rinse again.

Cut it in to thick strips (thin ones may brown soon)

Sliced chips

Add salt, turmeric, chili powder, evoo, cumin powder

Put in air fryer basket in 1 lb batches

Fry in air fryer (see timings and temp below)

Enjoy a worthy snack , because we all deserve these :) 

Ingredients:
Sweet potato - 2 lb
salt - 3/4 tsp
red chilly powder - 3/4 tsp
cumin - 1/2 tsp
turmeric powder - 1/4 tsp
pepper powder - 1/2 tsp
Extra virgin olive oil - 2 tbsp

Method:
Soak and rinse the sweet potatoes to remove any dirt.
Scrub and peel the sweet potatoes. Rinse and wash thoroughly again.
Cut it into  thick strips (thinner ones get brown easily, as sweet potato is sweet :).
Put all the ingredients along with sweet potatoes , in a large mixing bowl, mix well.
Preheat the air fryer basket for 3 minutes at 350 F.
Take the basket out, fill it with prepared sweet potatoes upto half the height. I do 1 lb per batch in my Bella fryer (see specifications above).
Set time to 20 minutes. Fry for 10 minutes.  Take out, toss and cook  again for nearly 10 minutes.  If it starts browning unevenly, then reduce temperature  to 320 and cook for 5 more minutes. IT would be done.
Air fried 'sweet potato fry' is ready!

Serving suggestion:
Serve hot with tomato ketchup as snack or side dish.

Note:
The total process may take 20 - 30 minutes for air frying, depending on the capacity. 
Preparation time for 2 lb may take 15 minutes.
The leftovers (if any) can be frozen and air fried again for a crispy fry. But DO NOT thaw them before putting in air frier.
